Makes 12 muffins. Keeps in an airtight container for 3 days or in the fridge for up to a week.

Herb Garden Biscuits

2 cups spelt flour

2 tsp baking powder

½ tsp baking soda

½ tsp sea salt

1 tbsp minced fresh parsley

(or 1 tsp dried)

1 tbsp minced fresh basil

(or 1 tsp dried)

2 tsp minced fresh rosemary

leaves (or 1 tsp dried)

1 tsp marjoram leaves

(or ½ tsp dried)

½ cup cold non-hydrogenated

coconut oil (or non-dairy, non-GM

margarine), chopped into ¼-in

(⅔-cm) cubes

¾ cup buttahmilk (1 tbsp apple

cider vinegar + non-dairy

milk—use something rich like

almond milk)

1 tsp dry or liquid sweetener
